I've gone tempura crazy! Why, because I LOVE it. Tempura is a great way of frying seafood and vegetables, without the oil that frying them would add. Both get cooked perfectly on the inside, while being encased in a crunchy, crispy outer layer, while the flavor of each vegetable is enhanced. I especially loved the kale, potato slices and the big surprise...long thin ribbons of zucchini (which I thought would fall apart and didn't) were amazing. The shrimp was perfectly cooked and the tilapia (any firm fish will do) was melt in your mouth, flaky good.

Whenever I have tempura at a restaurant it is always so light and crispy, the boxed store-bought stuff is okay providing you rush to the table within minutes to eat it or it gets soggy and soft, I have tryed many tempura recipes over my 35 years of cooking I have to say this one is the best, it produces a very light crispy coating that holds up well - I have used this to make tempura veggies and froze them after deep-frying in this batter, and just reheated them in a small amount of oil, also with bite-size meaty pieces of fish and with about 15 large peeled shrimp cooked about 3 minutes - remember the tempura must sit out at room temperature for 10 minutes before using, If you want to make a double recipe of tempura, then make two exact recipes using two separate bowls, do NOT double the recipe and make it all in one bowl it will not work - use only rice flour for this anything else will not work the same and use only a light-coloured beer.

A light batter is made of cold water (sometimes sparkling water is used to keep the batter light)[1] and soft wheat flour (cake, pastry or all-purpose flour).[2][3][4]Eggs, baking soda or baking powder, starch, oil, and/or spices may also be added. Tempura batter is traditionally mixed in small batches using chopsticks for only a few seconds, leaving lumps in the mixture that, along with the cold batter temperature, result in the unique fluffy and crisp tempura structure when cooked. The batter is often kept cold by adding ice, or by placing the bowl inside a larger bowl with ice in it. Overmixing the batter will result in activation of wheat gluten, which causes the flour mixture to become soft and dough-like when fried.

At its crispy, gossamer best, tempura is unlike any other fried food. I remember the first time I ate at one of Tokyo's tempura-ya several years ago. At these specialized tempura shops, the chefs are experts at the technique, in which seafood and vegetables are dipped into a simple batter of flour, water, and egg yolks, then quickly cooked in hot vegetable oil and served piping hot. The deep-fried shrimp I ordered that day were steaming, sweet, and tender, with an airy, remarkably greaseless crust. Extra wisps of crunchy batter clung delectably to each piece. They were accompanied by a soy sauce-and-rice wine dipping sauce that was peppered with fresh, spicy grated ginger and daikon. I savored every bit of that tempura; for an American used to doughy batter-fried foods, it was a revelation.
